When life gives you lemons, make VEGAN LEMON CAKE!

Our lemon cake mix makes the perfect base for a lemon drizzle, lemon cupcakes, or a lemon birthday cake! Try drizzling with syrup and icing, or layer with homemade lemon curd and vanilla buttercream for the perfect afternoon treat!
This mix will make TWO (thicker) 6” round cakes, or two (thinner) 8“ round cakes, or one large tray bake. We recommend using two cake mixes for a taller cake.

-Simply preheat your oven to 160’ and line your baking pans

-Add your cake mix to a mixing bowl, and add: 360ml plant milk, 120ml vegetable or sunflower oil, and 1 teaspoon of lemon juice or apple cider vinegar.

-Mix until the mixture is a smooth consistency

-Add your mix to your pans and pop them in the oven for 17-23 minutes

-Test your cakes with a knife, if the knife is clean, your cakes are ready!

-Leave to cool and decorate as you wish!


Drizzle (optional):
2 lemons juiced, 80g sugar (icing, caster or granulated), and 1 tbsp water

-Heat all drizzle ingredients in a pan until sugar has dissolved and it becomes a syrupy texture.

-Poke holes in your cake, and drizzle over whilst the cake is still warm, leave to cool.

Lemon Cake Mix Ingredients:

Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin, sugar, Disodium Diphosphate, Sodium Hydrogen Carbonate, Rice Flour, cornflour, Pink Himalayan salt, Vanilla powder, lemon zest.
Contains: Gluten. May contain traces of nuts, peanuts, soya, milk, celery, sesame, lupin, sulphites.
